This is an adapted version of Minimalist Baker’s Butternut Squash Bowl with queso adapted from this (non-vegan) recipe from Recipe Tin Eats. I was making this quickly / didn’t have all the spices, so if I were making this again, I would definitely add more spices but either way it’s delicious and that queso, in particular, is so moreish (I’ve already tried the leftovers out with some tortilla chips).
